I don't recall which nation he was representing in this dance, but I do remember it was intended to intimidate enemies prior to battle.

You, sir, must be well-travelled. That is, in fact, a Maori. The Lu'au focused on Polynesia, rather than just Hawaii. They performed ceremonial dances/greetings from Hawaii, New Zealand, Tahiti, and Samoa. Good eye.
